Region’s 117 Debuts Farm-to-Table Spring Menu
Northern Virginia restaurant offers picturesque dining experience
Region’s 117, Northern Virginia’s hottest new farm-to-table restaurant, has unveiled its new spring menu as part of an effort to change its offerings every season. The restaurant is situated on the picturesque 117-acre Lake Frederick and was recently recognized again by the national dining website OpenTable with a coveted Diners’ Choice Award.
“It only makes sense when you’re a farm-to-table restaurant that the offerings on the table would change when the farm’s crops do,” said Bilstad. “We’re always going to have some of our customer favorites, but when the weather changes, so will our menu.”
Executive Chef Scott Bilstad said the new menu is based on suggestions from customers, seasonally available ingredients from local farms and experimental takes on classic dishes that were inspired by looking at old cookbooks.
New dishes at the lakeside restaurant include tuna sashimi with ponzu sauce, sliced cucumber and red Fresno chili and barbecued shrimp with strawberry salsa, citrus rice and sautéed spinach with roasted garlic. Other new additions include a Southern take on bruschetta.
Region’s 117 is housed in the new 36,000 sq. ft. Shenandoah Lodge & Athletic Club, located at Trilogy at Lake Frederick, an exclusive and upscale 55+ active lifestyle resort community 90 minutes from Washington, D.C. It offers scenic views of both Lake Frederick and the surrounding Shenandoah Valley with optional seating on the outdoor veranda.
“We serve a lot of comfort food, but we never want our kitchen to get too comfortable,” said Bilstad. “We want to keep challenging ourselves to come up with new dishes with in-season crops from area farms.”
